Keep Calm and Eat Cake!


Image‘Twas a dear co-worker’s birthday and a cake was in order. The guy likes Southern Comfort, so that had to be incorporated in the cake as well. The result is this two layer chocolate butter cake moistened with Southern Comfort syrup, filled and topped with vanilla buttercream.

Like most people, I like the way fondant looks on cake but am not a fan of its taste. I tried to make my buttercream look fondant-y. While the result is far from professional, it is a trick worth perfecting. Here is a link to the tutorial.

P.S. I think the buttercream did great disservice to the moist and rich cake. My two cents for those of you who want to bake this cake for an occasion: use ganache!
